Seafood and pasta fans will love this recipe as it combines the best of both worlds. This is a healthy, refreshing and delicious meal that provides a healthy dose of high-quality proteins, unsaturated fats, and complex carbohydrates. Add in some CBD-infused green pesto and the combination is absolutely to die for.

Ingredients

For the CBD Pesto –

  • ½ cup cherry tomatoes
  • ½ cup fresh parsley
  • 2 garlic cloves (medium)
  • 4 tsp 500 mg full-spectrum CBD oil
  • 2 tbsp olive oil
  • Salt and pepper to taste

For the Shrimp Pasta – 

  • 8 oz raw penne pasta
  • 1 lb asparagus (cut into 2 inch pieces)
  • 2 cherry tomatoes (halved)
  • 1 tbsp fresh lemon juice
  • 1 tbsp olive oil
  • 1 tsp cayenne pepper
  • 1 tsp red chilli flakes
  • Salt and pepper to taste

Directions

  • Rinse the greens in cold water and add all the ingredients for the pasta into a food processor or mixer. 
  • Mix until the pesto becomes a smoothly-textured sauce. 
  • Transfer the pesto mix into a bowl, cover with clear wrap and refrigerate.
  • In a large boiling pot, boil water and add the raw penne pasta. Follow the instructions on the pasta package and cook accordingly.
  • In a large saucepan, heat some butter with olive oil until the butter is completely melted.
  • In a mixing bowl, add the red and black pepper, salt, and cayenne pepper. 
  • Add the shrimp to this mix ensuring each piece is individually coated with the salt and pepper mixture. 
  • Add the shrimp to the saucepan. Add the lime juice to the pan and cook until the shrimp is light pink on each side. 
  • Cut the asparagus into 2-inch pieces and add it to the paste and cook for 3 minutes. Drain and set aside. 
  • Once the shrimp is completely cooked, add the pasta and asparagus to the saucepan and saute for about 1 minute. 
  • Remove from heat. 
  • Add 6-8 tablespoons of pesto.
  • Garnish with cherry tomatoes and fresh basil.
  • Top with grated Parmesan cheese and serve.
